Yet there is a prejudice that abounds against sea salt as supposedly being of a lesser quality than conventional kitchen salt, due to the presence of ‘impurities’, the slightly off ‘white’ colour and the less favourable flow properties of sea salt.

It stands in reference to the refining of the product, by washing the sea salt with pure water, drying, breaking and sieving the salt grains.
