Fleur de Sel is the purest sea salt of all.
And to create it requires a special set of climate conditions. When a steady easterly wind blows across the salt basins of the Mediterranean and Atlantic Ocean and the forecast is for a long period without rain, a frothy deposit of salt is created at the crystallisation point.
This layer is removed carefully by hand by the salt extractors. It’s time-consuming work, with not a huge amount to show for it.
In fact, it takes 35 m² of water area to produce just 1 kg of Fleur de Sel! Rare salt indeed.
